  • 1 Bay leaf
  • 2 tablespoons Chole masala
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1.5 teaspoons or to taste Salt
  • 3 tablespoons Oil
  • 2 cups Water
  • 2 cups For Bhature: All-purpose flour
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Oil for dough
  • 0.75 cup Water for dough
  • 3 cups Oil for frying bhature

Directions

Step 1

To prepare chole, heat 3 tablespoons of oil in a large pan over medium heat. Add cumin seeds and bay leaf, and let them sizzle for 30 seconds.

Add the chopped onion and sauté until it becomes golden brown.

Add ginger, garlic, and green chilies, and sauté for another 2-3 minutes until the raw aroma disappears.
