Ingredients

  • 2 cups unsweetened almond milk
  • 0.5 cup unsweetened cacao powder
  • 1 scoop dairy-free chocolate protein powder
  • 0.25 cup maple syrup
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 0.25 cup dairy-free chocolate chips (optional)
  • 0 banana slices (for serving, optional)

Directions

Step 1

In a medium saucepan, whisk together the unsweetened almond milk and cornstarch until the cornstarch is completely dissolved, with no lumps remaining.

Step 2

Place the saucepan over medium heat and add the unsweetened cacao powder, dairy-free chocolate protein powder, maple syrup, vanilla extract, and sea salt. Whisk everything together until smooth.

Step 3

Continue to stir the mixture frequently as it heats, for about 5 to 7 minutes, or until it starts to thicken. The pudding should coat the back of a spoon.

Step 4

If desired, stir in the dairy-free chocolate chips until they are melted and the mixture is smooth.

Step 5

Remove the saucepan from the heat and let the pudding cool slightly. It will thicken further as it cools.

Step 6

Transfer the pudding to individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.

Step 7

Refrigerate for at least 2 hours to allow it to set fully.

Step 8

Serve chilled, garnished with optional banana slices or any other desired toppings.
