Ingredients

  • 150 g Hazelnuts
  • 150 g Granulated sugar
  • 60 ml Water
  • 200 g Dark chocolate (dairy-free, at least 70% cocoa)
  • 30 g Coconut oil
  • 1 tsp Vanilla extract
  • 0.5 tsp Sea salt

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Spread the hazelnuts on a baking sheet and roast them in the preheated oven for 10 minutes, or until they are golden brown and fragrant. Keep an eye on them to prevent burning.

Step 3

Remove the hazelnuts from the oven and allow them to cool slightly. Once cooled, rub the hazelnuts between your hands to remove as much of the skin as possible.

In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently to moisten all of the sugar.

Continue to cook the sugar-water mixture without stirring, allowing it to come to a boil. Cook until the sugar turns a deep amber color, approximately 8-10 minutes.

Remove the saucepan from heat and quickly stir in the roasted hazelnuts, ensuring they are well coated with the caramel.

Transfer the caramel-coated hazelnuts onto a parchment-lined baking sheet, spreading them out into a single layer. Allow them to cool and harden completely.
