Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 cup non-dairy milk (such as almond or soy milk)
  • 1 egg (or egg substitute for vegan option)
  • 2 tablespoons vegetable oil (plus extra for greasing the pan)
  • 0.5 cup dairy-free chocolate chips

Directions

Step 1

In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.

Step 2

In a separate bowl, mix the non-dairy milk and apple cider vinegar. Let it sit for a couple of minutes to curdle slightly, creating a dairy-free 'buttermilk.'

Step 3

Add the vanilla extract, egg or egg substitute, and vegetable oil to the 'buttermilk' mixture. Whisk until well combined.

Step 4

Gradually pour the wet ingredients into the dry ingredients, mixing gently until just combined. Do not overmix; some lumps are fine.

Step 5

Fold in the dairy-free chocolate chips into the batter.

Step 6

Heat a non-stick pan or griddle over medium heat and lightly grease it with vegetable oil.

Step 7

Pour about 1/4 cup of batter onto the hot griddle for each pancake.

Step 8

Cook until bubbles form on the surface of the pancake, about 2-3 minutes.

Step 9

Flip the pancake and cook on the other side until cooked through, approximately another 2 minutes.

Step 10

Repeat with the remaining batter, adding more oil to the pan as needed to prevent sticking.

Step 11

Serve warm, topped with your favorite syrup or dairy-free whipped cream.
