Ingredients

  • 200 g Dark chocolate (dairy-free)
  • 100 g Coconut oil
  • 150 g Brown sugar
  • 3 Large eggs
  • 1 tsp Vanilla extract
  • 50 g All-purpose flour
  • 0.25 tsp Salt

Directions

Step 1

Preheat your oven to 200°C (180°C fan-assisted) or 400°F. Grease four ramekins with a little coconut oil and set them aside.

Step 2

In a heatproof bowl over a pot of simmering water (double boiler), melt the dairy-free dark chocolate and coconut oil together, stirring occasionally until smooth. Remove from heat and allow to cool slightly.

Step 3

In a separate mixing bowl, whisk together the brown sugar and eggs until the mixture is pale and slightly thickened.

Step 4

Add the melted chocolate mixture to the egg and sugar mixture, gently folding until combined.

Step 5

Stir in the vanilla extract, followed by the all-purpose flour and salt. Mix until smooth and well combined.

Step 6

Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.

Step 7

Place the ramekins on a baking sheet and bake in the preheated oven for about 10-12 minutes, until the edges are set but the center remains soft.

Step 8

Remove from the oven and let the cakes cool for a minute before running a knife around the edges and inverting each onto a plate.

Step 9

Serve immediately, optionally with a garnish of fresh berries or a scoop of dairy-free ice cream.
