Ingredients

  • 200 grams Dairy-free dark chocolate
  • 100 grams Coconut oil
  • 3 large Eggs
  • 3 large Egg yolks
  • 150 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 50 grams All-purpose flour
  • 2 tablespoons Cocoa powder
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 200°C (392°F) and lightly grease six ramekins with coconut oil.

Step 2

In a heatproof bowl, melt the dairy-free dark chocolate and coconut oil together over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Stir until smooth, then remove from heat.

Step 3

In a separate large mixing bowl, whisk together the whole eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened, about 2-3 minutes.

Step 4

Stir in the vanilla extract and melted chocolate mixture, mixing until fully incorporated.

Step 5

Sift the all-purpose flour, cocoa powder, and salt into the bowl, carefully folding them into the chocolate mixture with a spatula until no lumps remain.

Step 6

Evenly divide the batter among the prepared ramekins, filling each about three-quarters full.

Step 7

Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are firm but the centers remain soft.

Step 8

Remove from the oven and let the fondants rest for 1 minute before carefully inverting them onto serving plates.

Step 9

Serve immediately while the centers are still molten, optionally dusted with extra cocoa powder or accompanied by fresh berries.
