Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 cup unsweetened applesauce
  • 1 cup coconut milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon white vinegar
  • 0.25 cup olive oil
  • 1 cup dairy-free chocolate chips
  • 0.25 cup almond milk
  • 1 tablespoon maple syrup

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

Step 2

In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.

Step 3

In another bowl, mix the sugar, applesauce, coconut milk, vanilla extract, vinegar, and olive oil until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 5

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 7

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 8

To make the chocolate glaze, place the dairy-free chocolate chips and almond milk in a microwave-safe bowl.

Step 9

Heat in the microwave in 30-second intervals, stirring between each interval, until the chocolate is melted and smooth.

Step 10

Stir in the maple syrup to the melted chocolate, and mix until shiny and smooth.

Step 11

Once the cake is completely cool, pour the chocolate glaze over the top, allowing it to drip down the sides.

Step 12

Let the glaze set for about 20 minutes before slicing and serving.
