Ingredients

  • 1 head Romaine lettuce
  • 200 grams Cherry tomatoes
  • 1 medium Cucumber

  • 1 medium Avocado
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 0.5 cup Fresh cilantro
  • 1 medium Lime
  • 2 tablespoons Chipotle peppers in adobo sauce
  • 4 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the romaine lettuce and chop it into bite-sized pieces. Place it in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Peel and dice the cucumber, then add it to the salad bowl.

Thinly slice the red onion and add it to the mix.
