  • 1 cup cherry tomatoes, halved
  • 1 cup frozen corn kernels, thawed
  • 2 teaspoons chipotle peppers in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 medium lime, juiced
  • 1 large avocado, sliced
  • 0.25 cup fresh cilantro, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil, cover, reduce heat to low, and simmer for 30-35 minutes or until the rice is tender and the liquid is absorbed.
