  • 0.25 cup Nutritional yeast

  • 1 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 1 can (10 ounces) Diced tomatoes with green chilies
  • 2 cups Water (for soaking cashews)

Directions

Step 1

Place 1 cup of raw cashews in a bowl and cover them with 2 cups of water. Let them soak for 2 to 4 hours to soften, then drain and rinse well.

In a blender, add the soaked cashews, 1 cup of fresh water, 1/4 cup nutritional yeast, 2 chipotle peppers, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, 1 teaspoon salt, 1 tablespoon lemon juice, and 1 tablespoon olive oil.

Blend on high speed until the mixture is very smooth and creamy, ensuring there are no chunks remaining.
