Ingredients

  • 2 pieces boneless, skinless chicken breasts

  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces large flour tortillas
  • 2 cups dairy-free cheese shreds
  • 0.5 pieces red onion, thinly sliced
  • 1 pieces red bell pepper, thinly sliced
  • 0.25 cup fresh cilantro, chopped
  • 1 pieces avocado, sliced
  • 1 pieces lime

Directions

Step 1

In a bowl, combine the chipotle peppers, olive oil, cumin, garlic powder, onion powder, salt, and black pepper.

Step 2

Add the chicken breasts to the bowl and coat them well with the marinade. Allow them to marinate for at least 15 minutes.

Step 3

Heat a grill or grill pan over medium-high heat. Cook the marinated chicken breasts for about 5-7 minutes on each side, or until fully cooked through and nicely charred. Remove from heat and let cool slightly.
