Ingredients

  • 2 cups Cooked brown rice
  • 1 can Black beans, drained and rinsed
  • 1 cup Fresh corn kernels
  • 1 cup Cherry tomatoes, halved
  • 1 Avocado, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 4 Lime wedges

Directions

Step 1

In a blender or food processor, combine the chipotle peppers, olive oil, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Blend until smooth to create a marinade.
