Ingredients

  • 6 pieces large eggs
  • 4 cups water
  • 3 pieces black tea bags
  • 0.5 cup soy sauce
  • 3 pieces star anise
  • 1 piece cinnamon stick
  • 1 tablespoon sugar
  • 1 teaspoon Sichuan peppercorns
  • 1 teaspoon salt
  • 1 strip orange peel

Directions

Step 1

Place the eggs in a medium-sized pot and cover with water by about an inch.

Step 2

Bring the water to a rolling boil over medium-high heat, then reduce the heat to low and let the eggs simmer gently for 8 minutes.

Step 3

Remove the eggs from the pot and transfer them to a bowl of ice water to cool for about 5 minutes.

Using the back of a spoon, gently tap each egg to crack the shells all over but do not peel the eggs. This will allow the flavors to seep in and create a marbled pattern.
