Ingredients

  • 4 large eggs
  • 1 teaspoon red chilli flakes
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 8 cherry tomatoes, quartered
  • 1 cup fresh spinach
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Crack the eggs into a mixing bowl and whisk them together with the almond milk, red chilli flakes, salt, and black pepper until well combined.

Step 2

Heat the olive oil in a non-stick skillet over medium heat.

Step 3

Add the chopped onion to the skillet and sauté for 2-3 minutes or until it becomes translucent.

Step 4

Add the quartered cherry tomatoes to the onions and cook for another 2 minutes until the tomatoes start to soften.

Step 5

Add the fresh spinach to the skillet, stirring occasionally until the spinach wilts, about 1 minute.

Step 6

Pour the egg mixture into the skillet. Stir gently and continuously with a spatula to ensure even cooking.

Step 7

Cook the scrambled eggs for 3-4 minutes, stirring constantly, until they are softly set and slightly runny in places. They will continue to cook a bit more off the heat.

Step 8

Remove the skillet from the heat and let the eggs sit for a few seconds to finish cooking.

Step 9

Serve immediately, garnished with additional chilli flakes if desired.
