Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 poblano peppers, seeded and chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 pound tomatillos, husked and chopped
  • 2 4-ounce cans canned diced green chilies
  • 2 cups low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped

Directions

Step 1

1. Heat the olive oil over medium-high heat in a large pot or Dutch oven.

2. Add the chicken thighs to the pot and cook for 5-7 minutes on each side or until browned. Remove the chicken and set aside.
