Ingredients

  • 15 oz canned chickpeas, drained and rinsed
  • 0.5 cup rolled oats
  • 0.5 cup onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 0.25 cup cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 3 tablespoons flour (any type, for binding)
  • 4 pieces burger buns
  • 4 pieces lettuce leaves
  • 1 tomato sliced tomatoes
  • 1 avocado sliced avocado
  • 4 tablespoons dairy-free mayonnaise (optional)

Directions

Step 1

In a food processor, combine the chickpeas, rolled oats, onion, garlic, cilantro, ground cumin, ground coriander, smoked paprika, salt, black pepper, and lemon juice. Pulse until the mixture is well combined and holds its shape but is not completely smooth.

Step 2

Transfer the mixture to a bowl and stir in the flour. This will help bind the patties together.

Step 3

Using your hands, form the mixture into 4 equal-sized patties.

Step 4

In a large skillet, heat olive oil over medium heat. Add the chickpea patties to the skillet and cook for 5-7 minutes on each side until golden brown and heated through.

Step 5

While the patties are cooking, prepare the buns by toasting them lightly if desired.

Step 6

Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a chickpea patty, a slice of tomato, and slices of avocado. Spread dairy-free mayonnaise on the top half of the bun if using, then close the burgers.

Step 7

Serve immediately and enjoy your dairy-free chickpea burger!
