  • 4 pieces chicken breasts

  • 1 cup coconut milk
  • 1 tablespoon arrowroot powder
  • 1 teaspoon fresh thyme
  • 1 tablespoon lemon juice
  • 0.25 cup, chopped fresh parsley

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
