  • 1 pound Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 1 large, diced Yellow onion
  • 3 minced Garlic cloves
  • 1 diced Red bell pepper
  • 1 diced Green bell pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Tomato sauce
  • 2 cups Chicken broth
  • 8 pieces Corn tortillas
  • 0.5 cup, chopped Fresh cilantro
  • 1 cut into wedges Lime

Directions

Step 1

Cut the chicken breasts into bite-sized pieces.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Add the chicken pieces to the skillet and cook for 5-7 minutes, or until they are browned and cooked through. Remove the chicken from the skillet and set aside.
