Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 sheets rice paper wraps
  • 1 cup cooked jasmine rice
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • 1 medium red bell pepper, thinly sliced
  • 0.5 cup fresh cilantro leaves
  • 1 medium avocado, sliced
  • 0.25 cup dairy-free hoisin sauce
  • 3 tablespoons water

Directions

Step 1

In a bowl, combine olive oil, soy sauce, lime juice, garlic powder, salt, and black pepper to create a marinade.

Place the chicken breasts in the marinade, turning to coat evenly. Cover and refrigerate for at least 15 minutes.

Preheat a grill or grill pan over medium heat.

Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes, then slice into thin strips.
