Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Season the chicken breasts with salt and pepper.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until cooked through.
Remove the chicken from the pan and let it cool slightly. Shred the chicken using two forks or chop into small pieces.
In the same skillet, add the remaining olive oil and sauté the onion until translucent, about 2-3 minutes. Add the garlic and cook for another minute.
Add the chopped spinach to the onion mixture and cook until wilted, about 2-3 minutes. Set aside to cool.
In a large bowl, combine the shredded chicken, onion and spinach mixture, and the dairy-free cream cheese. Mix until well incorporated. Adjust seasoning with more salt and pepper if necessary.
Lightly flour your work surface and roll out the puff pastry sheets to smoothen. Cut each sheet into 4 equal squares.
