Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 1 whole Lemon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 teaspoons Fresh thyme leaves
  • 4 cups Arugula
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 1 tablespoon Balsamic vinegar

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap or in a large resealable plastic bag. Using a meat mallet or rolling pin, gently pound the chicken until it is evenly 1/4 inch thick.

Step 2

In a small bowl, mix the olive oil, juice of half a lemon, salt, pepper, parsley, and thyme.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
