Ingredients

  • 1.5 pounds ground chicken
  • 0.5 cups gluten-free breadcrumbs
  • 0.25 cups unsweetened almond milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 0.25 cups ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 teaspoons olive oil
  • 0.25 cups ketchup, for glaze

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a small skillet, heat olive oil over medium heat, then sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for another minute, until fragrant. Remove from heat and let cool slightly.
