Ingredients

  • 500 grams boneless skinless chicken breasts
  • 1 large red onion
  • 1 large red bell pepper
  • 1 medium zucchini
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 3 medium garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 8 pieces wooden or metal skewers

Directions

Step 1

Cut the chicken breasts into 1.5-inch cubes and set aside.

Step 2

In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Whisk until well combined to create the marinade.

Step 3

Add the chicken cubes to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for better flavor.

Step 4

Cut the red onion, red bell pepper, and zucchini into similarly sized pieces as the chicken cubes.

Step 5

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

Step 6

Preheat the grill to medium-high heat.

Step 7

Thread the marinated chicken, onion, bell pepper, and zucchini onto the skewers, alternating between them.

Step 8

Place the skewers on the preheated grill and cook for about 10 to 15 minutes, turning occasionally until the chicken is cooked through and the vegetables are tender.

Step 9

Transfer the kababs to a platter and garnish with chopped fresh parsley before serving.

Step 10

Serve warm with your favorite sides or a simple salad.
