Ingredients

  • 4 pieces boneless, skinless chicken breasts

  • 250 grams button mushrooms, sliced
  • 400 ml coconut milk
  • 250 ml chicken broth
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon arrowroot powder
  • 2 tablespoons cold water

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
