Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 pound chicken thighs, skinless and boneless, cut into bite-sized pieces
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 8 cups chicken bone broth

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for another minute, until fragrant.

Cook the chicken until it is no longer pink on the outside, about 5 minutes.

Step 7

Pour in the chicken bone broth and add the bay leaf.

Step 8

Bring the soup to a gentle boil, then reduce the heat to low to simmer. Cover the pot and let it cook for about 30 minutes.

Stir in the collagen powder until completely dissolved.

Step 11

Add the fresh parsley and lemon juice, stirring to combine.
