Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 1 cup wild rice, rinsed and drained
  • 8 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 1 cup coconut milk (unsweetened)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with 0.5 teaspoon salt and 0.25 teaspoon black pepper.

Step 3

Add the chicken to the pot and cook until browned on both sides, about 5-7 minutes. Remove from the pot and set aside.

In the same pot, add chopped onion, diced carrots, diced celery, and minced garlic. Sauté for about 5 minutes until the vegetables are tender.
