  • 250 grams taro root
  • 100 grams tapioca starch
  • 50 grams purple sweet potato (optional for color)
  • 2 tablespoons sugar
  • 50 milliliters water

Directions

Step 1

Peel and cut the taro root and purple sweet potato into small cubes.

Steam the taro and sweet potato cubes until fully cooked and tender, about 15-20 minutes.

Once cooked, mash the taro and sweet potato separately in bowls until smooth.

Add half of the tapioca starch and 1 tablespoon of sugar to each bowl.

Gradually add water to each mixture, starting with 25 milliliters for each, and knead them into doughs. The doughs should be firm but pliable. If too dry, add a little more water slowly.

Roll each dough into thin logs, about 1 cm in diameter, and cut them into 2 cm pieces to form the taro balls.

Bring a large pot of water to a boil. Add the taro balls and cook until they float to the surface, which should take about 3-5 minutes.

Once cooked, transfer the balls into a bowl of cold water for a few minutes to maintain their chewy texture.
