Ingredients

  • 2 cups Egg whites
  • 2 cups Fresh spinach
  • 0.5 cup Nutritional yeast
  • 0.5 cup Red bell pepper
  • 0.25 cup Onion
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Lightly grease a 12-cup muffin tin with olive oil.

Step 3

Chop the fresh spinach, red bell pepper, and onion finely.

Step 4

In a medium skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, and sauté for about 3-4 minutes until they begin to soften.

Step 5

Add spinach to the skillet and cook for an additional 2 minutes, stirring occasionally, until wilted.

Step 6

Remove the skillet from heat and let the mixture cool slightly.

Step 7

In a large mixing bowl, whisk together the egg whites, nutritional yeast, garlic powder, salt, and black pepper.

Step 8

Stir the cooled vegetable mixture into the egg white mixture until well combined.

Step 9

Pour the mixture evenly into each of the prepared muffin cups, filling them about three-quarters full.

Step 10

Bake in the preheated oven for 20-25 minutes or until the egg white bites are set and lightly golden on top.

Step 11

Remove from the oven and let them cool in the muffin tin for 5 minutes before carefully transferring to a wire rack.

Step 12

Serve warm or store in an airtight container in the fridge for up to 3 days. These bites can also be frozen for up to 1 month.
