Ingredients

  • 12 ounces rotini pasta
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 cups cooked ham, diced
  • 2 cups broccoli florets, chopped
  • 2 cups unsweetened almond milk
  • 1 cup nutritional yeast
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a little olive oil.

Step 2

Cook the rotini pasta according to package instructions until al dente, then drain and set aside.

Step 3

In a large skillet, warm the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Step 4

Add the minced garlic to the skillet and cook for another minute until fragrant.

Step 5

Stir in the diced ham and chopped broccoli florets and cook for 3-4 minutes until the broccoli starts to soften.

Step 6

In a medium bowl, whisk together the almond milk, nutritional yeast, cornstarch, lemon juice, dijon mustard, salt, black pepper, and paprika until smooth.

Step 7

Pour the sauce mixture into the skillet with the ham and broccoli, stirring constantly, until the sauce thickens and begins to bubble, about 5 minutes.

Step 8

Combine the cooked pasta with the cheesy ham and broccoli mixture and stir until everything is well-coated.

Step 9

Transfer the pasta mixture into the prepared baking dish, spreading it evenly.

Step 10

Bake the casserole in the preheated oven for 15-20 minutes until heated through and the top is lightly golden.

Step 11

Remove from the oven and let it sit for a few minutes before serving to allow the casserole to set.
