Preheat your oven to 375°F (190°C).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
Add the chicken breasts to the skillet and cook until browned on each side, about 6 minutes total (the chicken does not need to be fully cooked as it will finish in the oven). Remove chicken from the skillet and set aside.
