Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 can (15 oz) black beans
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.5 cup nutritional yeast
  • 0.75 cup plant-based milk
  • 1 lime
  • 0.5 cup cilantro
  • 4 large flour tortillas
  • 1 tomato
  • 1 avocado
  • 0 to taste salt and pepper

Directions

Step 1

Rinse the brown rice under cold water and combine it with 2 cups of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for about 25 minutes or until the rice is tender and water is absorbed.

While the rice is cooking, finely chop the onion and garlic.

Heat olive oil in a pan over medium heat. Sauté the onion until translucent, about 5 minutes. Add the garlic and cook for another minute.
