Ingredients

  • 1 cup Almond milk
  • 1 cup Water
  • 1 cup All-purpose flour
  • 1 tablespoon Chickpea flour
  • 3 tablespoons Coconut oil, melted
  • 0.25 teaspoon Salt
  • 14 ounces Silken tofu
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Coconut oil

Directions

Step 1

In a blender, combine almond milk, water, all-purpose flour, chickpea flour, 3 tablespoons melted coconut oil, and salt. Blend until smooth and let the batter rest for 10 minutes.

Step 2

Preheat a non-stick skillet over medium heat and lightly grease with coconut oil.

Step 3

Pour about 1/4 cup of the crepe batter into the pan, swirling it to coat the bottom evenly. Cook for about 1-2 minutes until the edges lift with ease and the underside is lightly golden.

Step 4

Flip the crepe and cook for an additional 30 seconds. Transfer to a plate and repeat with the remaining batter.

Step 5

In a food processor, blend silken tofu, nutritional yeast, lemon juice, maple syrup, and vanilla extract until smooth to create the filling.

Step 6

Place a crepe on a clean surface, spoon about 2 tablespoons of the tofu mixture along one edge, fold over the sides, and roll up like a burrito.

Step 7

Heat 1 tablespoon of coconut oil in a skillet over medium heat. Place the blintzes seam-side down and cook until golden brown, about 2-3 minutes per side.

Step 8

Serve warm, with your choice of toppings like fresh berries or fruit compote.
