Ingredients

  • 500 g fresh spinach
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 150 g tofu (firm), crumbled
  • 4 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 sheets puff pastry sheets (dairy-free)
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons sesame seeds

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Wash the spinach thoroughly and drain well. Roughly chop the spinach leaves.

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic to the skillet and cook for an additional minute until fragrant.
