Ingredients

  • 1 cup Rice flour
  • 2 tablespoons Tapioca starch
  • 1 tablespoon Potato starch
  • 2.5 cups Water
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 3 tablespoons Light soy sauce
  • 1 tablespoon Dark soy sauce
  • 1 tablespoon Sugar
  • 1 teaspoon Sesame oil
  • 2 tablespoons Chopped scallions

Directions

Step 1

In a mixing bowl, combine the rice flour, tapioca starch, and potato starch.

Step 2

Gradually add in water while stirring until the batter is smooth with no lumps.

Step 3

Stir in 1 tablespoon of vegetable oil and the salt into the batter.

Step 4

Prepare a steam rack inside a large pot and fill it with water, making sure the water level is below the steam rack.

Step 5

Bring the pot to a boil over high heat.

Step 6

Lightly oil a round baking dish or shallow plate that fits inside your pot.

Step 7

Pour a thin layer (approximately 3 tablespoons) of the batter into the oiled dish, tilting it to cover the entire base.

Step 8

Place the dish onto the steaming rack, cover the pot with a lid, and steam for about 4-5 minutes until the rice sheet becomes translucent.

Step 9

Carefully remove the dish and let it cool for a minute to handle.

Step 10

Using a broad spatula or scraper, gently lift and roll the rice sheet into a log.

Step 11

Transfer the roll to a plate and repeat the process with the remaining batter.

Step 12

To make the sauce, combine the light soy sauce, dark soy sauce, sugar, and sesame oil in a small saucepan over medium heat. Stir until the sugar is completely dissolved, then remove from heat.

Step 13

Cut the rice noodle rolls into bite-sized pieces.

Step 14

Pour the sauce over the noodle rolls and garnish with chopped scallions before serving.
