Ingredients

  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 2 minced garlic cloves
  • 700 grams, peeled and sliced carrots
  • 1 teaspoon ground coriander
  • 1 liter vegetable broth
  • 20 grams, chopped fresh coriander
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and garlic, and sauté for about 5 minutes until the onion is translucent.

Step 3

Add the sliced carrots to the pot and cook for another 5 minutes, stirring occasionally.

Step 4

Stir in the ground coriander and cook for 1 minute to release its aroma.

Step 5

Pour the vegetable broth into the pot and bring it to a boil.

Step 6

Reduce the heat to a simmer and cook for 20 minutes, or until the carrots are tender.

Step 7

Remove the pot from the heat and let it cool slightly.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.

Stir in the fresh coriander, and add salt and black pepper to taste.

Add the lemon juice and mix well.
