Ingredients

  • 2 cups Jasmine rice
  • 4 cups Water
  • 0.5 cups Canned coconut milk
  • 1 cup Fresh pineapple chunks
  • 1 medium Red bell pepper, diced
  • 1 medium Onion, diced
  • 2 cloves Garlic cloves, minced
  • 1 15-oz can Canned black beans, drained and rinsed
  • 3 stalks Scallions, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 teaspoon Ground allspice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Fresh black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear; this removes excess starch and prevents the rice from becoming sticky.

Step 2

In a medium saucepan, bring 4 cups of water to a boil. Add the jasmine rice and 1 teaspoon of salt. Reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and water is absorbed. Remove from heat but keep the lid on to allow the rice to steam for another 5 minutes.

While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Fluff the cooked rice with a fork and gently add it to the skillet with the other ingredients. Stir until the rice is well coated and heated through.

Season the mixture with fresh black pepper to taste and adjust salt if needed.

Step 11

Remove from heat and sprinkle the chopped cilantro over the top before serving.
