Warm the almond milk to about 37°C (98°F), ensuring it's not too hot to touch. Pour it into a mixing bowl and sprinkle the active dry yeast over the top. Add 1 tablespoon of the granulated sugar to help activate the yeast.
Let the yeast mixture sit for about 5-10 minutes, until frothy.
Add the vanilla extract, remaining granulated sugar, and salt to the yeast mixture.
In a separate large bowl, sift together the all-purpose flour and 1 teaspoon of ground cardamom.
Gradually add the flour mixture to the wet ingredients, stirring to combine with a wooden spoon until a dough begins to form.
Turn the dough out onto a lightly floured surface and knead it for about 8-10 minutes, until it becomes smooth and elastic.
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
