  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 cups cooked rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup salsa
  • 0.25 cup fresh cilantro, chopped
  • 1 cup diced tomatoes
  • 2 tablespoons green onions, sliced
  • 4 pieces large flour tortillas

Directions

Step 1

Preheat your grill or nonstick skillet over medium-high heat.

Step 2

In a bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, and black pepper.

Step 3

Rub the spice mixture all over the chicken breasts.

Step 4

Drizzle the chicken with olive oil and lime juice, rubbing it in.

Grill or cook the chicken for 6-7 minutes on each side or until fully cooked and juices run clear. The internal temperature should read 165°F (74°C).

Remove the chicken from heat and let it rest for 5 minutes, then dice it into small cubes.

In a large bowl, combine cooked rice, black beans, salsa, and chopped cilantro.

Lay out a tortilla on a flat surface. Spread about half a cup of the rice mixture in the center.

Step 9

Top the rice mixture with a quarter of the diced chicken, diced tomatoes, and green onions.

Step 10

Roll the burrito by folding in the sides, then rolling it from the bottom up, keeping it tight as you roll.

Step 11

Repeat with the remaining tortillas and fillings.

Step 12

Optional: Grill the burritos in a dry skillet over medium heat for 1-2 minutes per side for a crispy finish.

Step 13
