Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning

  • 1 large, sliced red bell pepper
  • 1 large, sliced green bell pepper
  • 1 large, sliced yellow onion
  • 4 cloves, minced garlic
  • 2 cups unsweetened almond milk
  • 1 tablespoon nutritional yeast
  • 2 tablespoons cornstarch
  • 1 cup, halved cherry tomatoes
  • 12 ounces gluten-free fettuccine or pasta of choice
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Slice the chicken breasts into thin strips.

Step 2

In a medium bowl, toss the chicken strips with 1 tablespoon of Cajun seasoning until well coated.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken strips and cook for 6-8 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
