Ingredients

  • 2 pieces Chicken breast
  • 4 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cloves Garlic cloves
  • 1 teaspoon Anchovy paste
  • 2 teaspoons Dijon mustard
  • 0.25 cup Dairy-free mayonnaise
  • 2 tablespoons Nutritional yeast
  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 2 tablespoons Capers
  • 1 cup Dairy-free croutons

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Rub the chicken breasts with 2 tablespoons of olive oil, 1 tablespoon of lemon juice, salt, and black pepper.

Step 3

Place the chicken on the grill and cook for 5-6 minutes on each side, or until the chicken is fully cooked and has nice grill marks.

Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
