Ingredients

  • 12 ounces pasta (fettuccine or any preferred type)
  • 3 tablespoons olive oil
  • 3 tablespoons dairy-free margarine or vegan butter
  • 2 cloves garlic cloves, minced
  • 2 tablespoons nutritional yeast
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving 1 cup of the pasta water.

Step 2

In the same pot, heat the olive oil and dairy-free margarine over medium heat until the margarine has melted.

Step 3

Add the minced garlic and sauté for about 1 minute, stirring frequently, until fragrant but not browned.

Step 4

Add the cooked pasta back into the pot, tossing to coat in the garlic oil and margarine mixture.

Step 5

Sprinkle the nutritional yeast over the pasta and stir well to combine, adding a bit of reserved pasta water if needed to create a smooth sauce.

Step 6

Stir in the fresh parsley, lemon juice, salt, and black pepper. Mix until the noodles are evenly coated.

Step 7

Adjust seasoning to taste, adding more salt, pepper, or lemon juice if desired.

Step 8

Serve immediately, garnished with additional fresh parsley and a pinch of red pepper flakes if you like a bit of heat.
