  • 16 sheets phyllo dough
  • 120 milliliters olive oil
  • 200 grams dairy-free feta cheese
  • 250 grams silken tofu
  • 30 grams nutritional yeast
  • 15 milliliters lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 30 grams fresh parsley

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a large baking dish with some olive oil.

Step 2

In a large bowl, crumble the dairy-free feta cheese.

Step 3

Add the silken tofu to the bowl and mix it with the dairy-free feta cheese, using a fork to mash the tofu until the mixture is smooth.

Stir in the nutritional yeast, lemon juice, salt, black pepper, and finely chopped fresh parsley. Mix until all ingredients are well combined.
