Ingredients

  • 1 medium onion
  • 2 stalks celery stalk

  • 1 liter vegetable stock
  • 1 leaf bay leaf
  • 1 teaspoon thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel the burdock root and slice it into thin, diagonal pieces.

Step 2

Peel and dice the carrot and onion. Chop the celery stalks into small pieces. Mince the garlic.

Step 3

In a large pot, heat olive oil over medium heat.

Add the onion and sauté for 3-4 minutes until translucent.
