Ingredients

  • 1 large loaf Baguette
  • 0.25 cup Olive oil
  • 3 whole Garlic cloves
  • 4 medium Fresh tomatoes
  • 1 cup Dairy-free cheese shreds (mozzarella style)
  • 0.5 cup Fresh basil leaves
  • 2 tablespoons Balsamic vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Slice the baguette into 1/2-inch thick slices. You should have about 16 slices.

Step 3

Arrange the slices on a baking sheet. Brush both sides with olive oil using a pastry brush.

Step 4

Place the baking sheet in the oven and bake for about 5 minutes, or until the bread slices are lightly toasted.

While the bread is toasting, peel and finely chop the garlic cloves.

Wash and core the tomatoes, then cut them into small cubes.
