  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 can coconut milk
  • 2 tablespoons arrowroot powder
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice the chicken breasts into bite-sized pieces.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the chicken to the skillet and season with salt, pepper, and onion powder.

Step 4

Cook the chicken, stirring occasionally, until it is browned and cooked through, approximately 8-10 minutes.

Step 5

Remove the chicken from the skillet and set aside.

Step 6

In the same skillet, add the remaining 1 tablespoon of olive oil.

Step 7

Add the minced garlic and cook for about 1 minute until fragrant.

Step 8

Add the broccoli florets to the skillet and sauté for about 5 minutes until they are bright green and tender-crisp.

Step 9

Pour in the chicken broth and bring it to a simmer.

Step 10

In a small bowl, whisk together the coconut milk and arrowroot powder until well combined.

Step 11

Add the coconut milk mixture to the skillet, stirring continuously until the sauce thickens, about 2-3 minutes.

Step 12

Return the chicken to the skillet, stirring to coat it in the sauce.

Step 13

Cook for another 2-3 minutes to allow flavors to meld and the chicken to heat through.

Garnish with freshly chopped parsley before serving.
