Ingredients

  • 5 cups broccoli florets
  • 2 cups unsweetened almond milk
  • 0.5 cup nutritional yeast
  • 1.5 cups dairy-free cheddar cheese, shredded
  • 2 tablespoons olive oil
  • 2 tablespoons rice flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 tablespoon coconut oil or other neutral oil for greasing

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with coconut oil or another neutral oil.

Step 2

Bring a large pot of water to a boil. Add the broccoli florets and blanch them for 2-3 minutes until they are bright green and tender-crisp. Drain and set aside.

Step 3

In a medium saucepan over medium heat, combine the olive oil and rice flour, whisking for about a minute to form a roux.

Step 4

Slowly add in the unsweetened almond milk while continuing to whisk to ensure there are no lumps.

Step 5

Continue to cook and whisk the mixture until it begins to thicken, about 3-4 minutes.

Step 6

Add nutritional yeast, shredded dairy-free cheddar cheese, garlic powder, onion powder, salt, black pepper, and paprika to the sauce. Stir until the cheese has melted and the sauce is smooth.

Step 7

Place the blanched broccoli into the prepared baking dish. Pour the cheesy sauce over the broccoli and stir gently to ensure even coverage.

Step 8

Bake in the preheated oven for about 25-30 minutes, until the casserole is heated through and slightly golden on top.

Step 9

Remove from the oven and let it cool for a few minutes before serving. Enjoy the casserole warm.
