Ingredients

  • 4 medium Russet potatoes
  • 4 tablespoons Olive oil
  • 1 large Onion
  • 4 slices Smoked bacon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash and peel the potatoes. Slice them into thin, even rounds about 1/4 inch thick.

Place the sliced potatoes into a pot of cold water and bring to a boil. Boil for 5 minutes, then drain and let them cool slightly.

While the potatoes are boiling, peel and slice the onion thinly. Chop the bacon into small pieces.
