Ingredients

  • 28 ounces canned diced tomatoes

  • 1 teaspoon ground coriander
  • 1 teaspoon sweet paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups fresh spinach, roughly chopped
  • 6 large eggs
  • 0.5 cup fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Heat the olive oil in a large skillet or wide saucepan over medium heat.

Step 2

Add the diced onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Add the canned diced tomatoes, ground cumin, ground coriander, sweet paprika, salt, black pepper, and, if using, red pepper flakes. Stir to combine well.
