  • 3 celery stalks, sliced
  • 2 cups chicken broth
  • 0.5 cup white wine (optional)
  • 1 14-ounce can canned diced tomatoes
  • 2 bay leaves
  • 1 teaspoon thyme, dried
  • 2 tablespoons parsley, chopped

Directions

Step 1

Season the chicken thighs with salt and black pepper.

Step 2

In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear until browned, about 4-5 minutes per side. Remove chicken and set aside.
