Ingredients

  • 500 grams Bottle gourd (lauki), peeled and diced
  • 1 large Onion, finely chopped
  • 2 medium Tomatoes, pureed
  • 1 teaspoon Ginger, minced
  • 2 cloves Garlic, minced
  • 1 small Green chili, slit
  • 1 cup Coconut milk
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 2 tablespoons Coconut oil
  • 2 tablespoons Fresh coriander leaves, chopped
  • 1 cup Water

Directions

Step 1

Heat coconut oil in a large pan over medium heat.

Step 2

Add mustard seeds and cumin seeds. Allow them to crackle for about 30 seconds.

Step 3

Add the chopped onion and sauté until translucent, about 4-5 minutes.

Step 4

Add minced ginger, garlic, and green chili. Cook for another 2 minutes until fragrant.

Step 5

Stir in the tomatoes and cook until the oil separates and the mixture thickens, about 5 minutes.

Step 6

Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well.

Step 7

Add the diced bottle gourd and mix to coat the pieces with the spices.

Pour in the coconut milk and water. Stir to combine.

Cover the pan and let it simmer for 15-20 minutes or until the bottle gourd is tender.

Step 10

Add garam masala and adjust salt if needed. Stir and cook uncovered for another 2 minutes.

Garnish with fresh coriander leaves.
